Made from a less noble part of the pig, the "belly" is among the most tasty products. Its preparation includes only a sauce of garlic and salting with a mixture of spices. It is then seasoned with aromas, mostly pepper, and hung for aging that lasts for at least 60 days. Excellent to taste raw, also serves for the preparation of sauces and fried delicacies.

Rigatino is the Tuscan name of bacon. Excellent as cold cuts in appetizer, great for cooking recipes. It is often used for Italian dishes such as "pasta alla carbonara" or "amatriciana". Particularly suitable also for "lining" game or roast meat.
