Cinta Senese PDO meats are characterized by the unique and unmistakable taste due to the wild breeding and genetic characteristics:
- the meat is streaked with fat in a homogeneous way, and this gives extraordinary flavours and fragrances: in fact, the aromatic substances are contained in the fats;
- the fat contained in the meat is rich in unsaturated fatty acids, in particular Omega 3 (capable of reducing fat in the blood) and Omega 6 (with antithrombic action).
- the fat is more fluid, and this gives a better diffusion of the flavours used for the spicing, making them more palatable.
