Made from a less noble part of the pig, the "belly" is among the most savory and tasty products. Its preparation includes only a sauce of garlic and salting with a mixture of spices. It is then seasoned with aromas, mostly pepper, and hung for aging that lasts for at least 60 days. Excellent to taste raw, it is also used for the preparation of sauces and fried delicacies.

Cinta Senese PDO meats are characterized by the unique and unmistakable taste due to the wild breeding and genetic characteristics:
- the meat is streaked with fat in a homogeneous way, and this gives extraordinary flavours and fragrances: in fact, the aromatic substances are contained in the fats;
- the fat contained in the meat is rich in unsaturated fatty acids, in particular Omega 3 (capable of reducing fat in the blood) and Omega 6 (with antithrombic action).
- the fat is more fluid, and this gives a better diffusion of the flavours used for the spicing, making them more palatable.
